Our Kale Salad: A New Twist on an Old Favorite

If you’re familiar with our family of restaurants that include LINCOLN in Penn Quarter and Teddy & The Bully Bar in Dupont Circle, you already know about our kale salad: it’s kind of a big deal around here. But as the City Paper piece notes, we are so much more than DC’s newest pizza place. Our Declaration kale salad is new and has been totally reinvented by Chef Demetrio Zavala. He scrubs the kale leaves with salt and olive oil, then compresses them so the olive oil shoots infuses the kale leaves’ veins, making them extra soft. The salad incorporates lightly smoked pears, pecorino cheese, and a winter squash romesco that’s made by roasting whole peeled squash and then pureeing it.

“I try to use every vegetable from end to end,” Zavala told the City Paper.

The mozzarella and ricotta for our 13 Colony Pie pizzas are house-made, which means they are extra fresh and give our pizzas a gourmet feel. Read more about our pizzas here. So much more than a pizzeria, our other entrees include a Philly cheesesteak with housemade cheese sauce and bone marrow aioli and an “upscale” clam chowder with potato gnocchi and parsley air. We make our own vinegars in-house, including beet and mushroom vinegars.

We rolled out our wings over Super Bowl weekend and they are so delicious. Our baked wings include pickled celery, caramelized onions, and a bleu cheese foam.
